Our Delicious Breakfasts and Recipes

A country breakfast at Hot Springs, VA’s Vine Cottage Inn is always a treat.  Jo is happy to witness empty plates returning from breakfast, and Jonah has been known to make you a member of the “clean plate club” when you make Jo smile.

Start with a cup of fresh-brewed 100% Colombian coffee beginning at 7am with breakfast service beginning at 8am.  Jonah will serve you juice, fruit and sweet item as soon as you are seated while Jo is preparing your meal to order.  Breakfast may consist of French Toast, Fresh Apple Pancakes, Waffles, Orange Pancakes, or any number of other delightful items.  We guarantee different breakfast foods each day, even if your stay lasts up to five or more days!  A portion of breakfast meat and eggs will round out the offering.

If you need a wake-up cup of coffee earlier than 7 a.m., or you would like an afternoon or late night cup, the bed and breakfast is outfitted with a Keurig single-service machine with a selection of flavors.

If you have special dietary needs, for whatever reason, just let us know when you make your reservation or when you check in, and we will make every effort to accommodate those needs.

Fresh Apple Pancakes with Apple Cider Sauce

Yield: makes 6-8 medium pancakes

Ingredients

  • 2 Cups Bisquick Mix
  • 2 Cups Milk
  • 2 Eggs
  • 1 ½ Medium Granny Smith Apples (peeled and coarsely chopped)
  • ¼ Cup Sugar
  • ¼ Cup Cornstarch
  • Apple Cider as needed
  • 1 ½ Medium Granny Smith Apples (peeled and coarsely chopped)

Instructions

  1. Hand-mix Bisquick, milk and eggs until batter is smooth.
  2. Add chopped apples and mix until batter is smooth.
  3. Mix sugar and cornstarch with small amount of apple cider and cook over low heat until sugar dissolves.
  4. Add apples and slowly add apple cider as needed, cook over low heat until apples are soft and sauce is proper consistency.

French Toast with Praline Sauce (New Orleans Style)

If you have extra sauce, it is great over ice cream!

Ingredients

  • 1 1lb. loaf of day old French Bread
  • 4 Eggs
  • 3 tbsp. Vanilla Extract
  • 3 tsp. Ground Cinnamon
  • 3 cups milk
  • ½ Cup Butter
  • 1 ½ Cups Brown Sugar
  • ¾ Cup Virginia Maple Syrup
  • ¾ Cup Whipping Cream
  • ¾ Cup Chopped Walnuts

Instructions

  1. Mix eggs, vanilla and cinnamon in bowl and let stand for a few minutes.
  2. Add milk and mix.
  3. Cut bread on an angle in 1 inch wide slices. (10 to 12 slices)
  4. Dip bread slices into the milk egg mixture (do not saturate) and place on hot grill.
  5. Cook until brown and crisp and turn over and do the same. Turn only once.
  6. Melt butter in a medium saucepan over low heat.
  7. Add brown sugar and maple syrup.
  8. When sugar has dissolved, add whipping cream.
  9. Stir in chopped walnuts. (Do not boil)

Orange Pancakes with Orange Sauce

Use Orange Juice in place of milk in your favorite Pancake Recipe.

Ingredients

  • ½ Cup Sugar
  • 1 tbsp. Cornstarch
  • 1 ¼ Cup Orange Juice
  • 2 tsp. Butter or Margarine
  • 1 8-oz. Can Pineapple Tidbits, Drained

Instructions

  1. Combine sugar and cornstarch in a small saucepan, then add the orange juice, stirring.
  2. For 2 minutes continue to cook and stir.
  3. Remove from heat.
  4. Add butter or margarine and pineapple, stirring.
  5. You may leave out the pineapple if you so desire.

Pumpkin Pancakes with Warm “Virginia” Maple Syrup

Ingredients

  • 4 Tbsp. Butter (melted)
  • 4 Large Eggs (Separate yolks and whites)
  • 1 Cup Pumpkin
  • 2 Cups Milk
  • 2 Cups All Purpose Flour
  • 2 tbsp. Sugar
  • 4 tsp. Baking Power
  • 1 tsp. Cinnamon
  • 1 tsp. Salt

Instructions

  1. Combine and mix pumpkin, egg yolks, milk and butter. Add dry ingredients. Hand mix until smooth. Fold in stiffly beaten egg whites.
  2. Ladle batter onto a hot (400 degree) grill. Makes 8-10 medium pancakes. Turn only one time and do not pat.
  3. Serve with butter and Warm “Virginia” Maple Syrup.
  4. (If you cannot get “Virginia” Maple Syrup the other kind will work!)
